Add ability to parse symlinks

... if, for example, a Theme is a symlink to elsewhere on the filesystem then the boot loader shows "Unable to read plist" (or "Error reading plist", or similar - it only flashes on screen for a second).

Given that the boot volume or EFI partition currently must be HFS, supporting symlinks would seem to be a good idea...
